Jollof Rice

Jollof Rice, is a popular and flavorful West African dish enjoyed across many countries, including Nigeria, Ghana, and Senegal.

Ingredients:

  • 2 cups long-grain parboiled rice
  • 1/4 cup vegetable oil
  • 1 large onion, finely chopped
  • 2 red bell peppers, chopped
  • 2 tomatoes, chopped (or 1 can of diced tomatoes)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1-2 scotch bonnet peppers (adjust to taste), chopped (optional for heat)
  • 1 tablespoon tomato paste
  • 2 teaspoons paprika
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • 2 teaspoons chicken or vegetable bouillon powder
  • 2 cups chicken or vegetable broth
  • 1 cup water (adjust as needed)
  • 2 cups mixed vegetables (e.g., peas, carrots, green beans)
  • 1 bay leaf
  • Salt and pepper, to taste
  • Protein of choice (e.g., grilled chicken, beef, or fish), cooked and set aside

Instructions:

  1. Prepare the Base Sauce:
    • In a blender, combine the red bell peppers, tomatoes, garlic, ginger, and scotch bonnet peppers (if using). Blend until smooth to create a pepper-tomato paste.
  2. Cook the Base Sauce:
    • Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until translucent.
    • Stir in the blended pepper-tomato paste and tomato paste. Cook for about 10 minutes, stirring occasionally, until the sauce thickens and the oil begins to separate from the paste.
  3. Add Spices:
    • Add the paprika, thyme, curry powder, and bouillon powder to the sauce. Stir well and cook for another 2 minutes.
  4. Add Rice:
    • Add the rice to the pot and stir to coat the rice with the sauce. Cook for 2-3 minutes to allow the rice to absorb the flavors.
  5. Add Liquids:
    • Pour in the chicken or vegetable broth and water. Add the bay leaf. Stir well and bring to a boil.
  6. Simmer:
    • Reduce the heat to low, cover the pot with a tight-fitting lid, and let the rice simmer for about 20-25 minutes, or until the rice is cooked and has absorbed most of the liquid. Check occasionally and add a little more water if the rice seems too dry.
  7. Add Vegetables:
    • About 10 minutes before the rice is done, stir in the mixed vegetables. Cover and continue cooking until the vegetables are tender and the rice is fully cooked.
  8. Finish and Serve:
    • Once the rice is cooked, fluff it with a fork and season with salt and pepper to taste. Remove the bay leaf.
    • Serve the Jollof Rice with your choice of protein, and enjoy!

Tips:

  • For Extra Flavor: Consider adding a splash of coconut milk to the broth for a richer taste.
  • For Authenticity: You can also cook the rice with a few slices of onion and a pinch of smoked paprika for additional depth of flavor.
